Curated by Executive Chef Charlie Song, the Spring Afternoon Tea intertwines fresh, seasonal produce with native Australian ingredients such as wattle seed, saltbush, Davidson plum, and desert lime. Guests will savour signature creations including seared kangaroo with Manuka honey caramelised onion relish and Skull Island king prawn salad on brioche, alongside refined sweet treats like Charlotte Fraise with mountain pepperberry and orange cake with finger lime pearls. Each plate celebrates Australia’s unique flavours and sense of place, transforming afternoon tea into a memorable culinary occasion.
This distinguished gathering is complemented by a curated selection of TWG teas, freshly brewed coffee, an Orange and Cointreau shooter, and a glass of Champagne per guest.
