Freyja
Located in Melbourne’s heritage-listed Olderfleet building, Freyja is a Nordic-inspired, produce-led restaurant championing local ingredients through a refined yet approachable lens. Led by Michelin-cred Executive Chef Jae Bang, Freyja celebrates modern Australian dining with techniques rooted in New Nordic philosophies. Spanning two levels, the interiors blend restored heritage features with Scandinavian minimalism. Dusty blue leather banquettes, blue marble-topped tables, slatted timber ceilings and hand-crafted chairs create a warm, contemporary feel.
Guests are welcomed by cathedral windows and an open Chef’s Kitchen upstairs, while below, a more intimate space offers private dining options. The seasonal à la carte menu showcases bold yet elegant dishes such as wagyu short rib with seafood mustard and redcurrant and Freyja’s signature smoked sour cream waffle with Yarra Valley trout roe or Sturia Oscietra caviar. Head Chef Aaron Caccia leads the kitchen alongside a team with global Michelin-starred experience.
The drinks list reflects the same care and craft, featuring Nordic spirits, local beers, and a dynamic wine program led by Advanced Sommelier Clotilde Candusso. Her curation includes biodynamic and organic varietals from Australia’s leading regions, alongside vintage European selections from Burgundy, Rhone and Tuscany. Artworks by Matthew Gillett add subtle gothic texture throughout the venue, complementing coastal tones and raw finishes. Freyja offers both lunch and dinner throughout the week and invites guests to experience a fresh take on Nordic-inspired dining in the heart of Melbourne.
